class="wp-block-paragraph">Long before Transylvania became a destination for travelers searching for medieval villages, fortified churches, beautiful countryside, extraordinary food and wine, life here followed a very different rhythm.

There were no supermarkets.

No refrigerators filled with food from around the world.

No quick trip to the store when something was needed.

For generations, the Transylvanian Saxons lived according to something much older:

the seasons.

Spring meant preparing the land.

Summer meant work in the fields, gardens and vineyards.

Autumn meant harvest—and preparing for winter.

Winter meant preserving what had been produced, repairing what needed attention, gathering around the fire and waiting for the cycle to begin again.

The seasons determined the work.

The work determined the food.

And the food helped determine how well a family would survive the winter.

This was the rhythm of life in the Saxon villages of Transylvania.

And although the world has changed dramatically, traces of that rhythm can still be experienced today in villages such as Richis.

A Life Built Around the Land

The traditional Saxon household was remarkably self-sufficient.

Research into the cultural landscape of the Transylvanian Saxons describes self-sufficiency as a fundamental part of the traditional household, while neighborhood cooperation helped communities share labor, equipment and responsibilities.

A typical household might have:

a vegetable garden

fruit trees

vineyards

chickens

pigs

cattle

sheep

grain

a cellar

storage areas

preserved foods

firewood for winter

The Saxon house itself was designed around this way of life.

The long, narrow house opened through a large gate into a courtyard, behind which could be gardens, barns, workshops, animal shelters and storage spaces.

The cellar was especially important.

It was where wine could be stored, vegetables preserved and food kept cool and protected until it was needed.

The house was not simply where the family lived.

It was the center of the family’s economy.

Spring: The Village Comes Back to Life

After a long Transylvanian winter, spring was a season of renewal—but also a season of work.

The snow disappeared.

The soil began to soften.

Fruit trees blossomed.

Gardens were prepared.

Fields were plowed.

Seeds were planted.

Animals returned to pasture.

And the vineyards demanded attention.

Spring was not a leisurely season. It was the beginning of another agricultural year, and the work that would determine the success of the coming harvest began now.

Preparing the Fields

Fields had to be prepared for crops such as grains, corn, vegetables and other foods needed by the household and animals.

The gardens were equally important.

Vegetables preserved through the winter were gradually replaced by fresh produce.

The cycle began again.

The Vineyard Awakens

The vines also entered a new season.

After winter pruning and dormancy, the vineyards required careful attention. The work of one year’s wine began long before anyone picked a grape.

The vines had to be cultivated, protected and tended throughout the growing season.

For Saxon communities, wine was not merely an agricultural product.

It was part of the culture.

Part of hospitality.

And part of village identity.

Spring Also Meant Easter

Religion and agriculture were deeply intertwined with village life.

Easter was one of the great events of the Transylvanian calendar.

Traditional Easter preparations could include cleaning and whitewashing houses, preparing clothing, tending the fields, decorating eggs and preparing festive foods.

For Saxon communities, Easter also brought distinctive customs and opportunities for families and young people to gather.

The winter season was ending.

The agricultural year was beginning.

And the village was coming alive again.

Spring represented renewal.

Summer: The Season of Long Days

Summer was the season when the countryside was at its most productive.

The fields were green.

The gardens were full.

The vineyards were growing.

Animals were grazing.

And there was work everywhere.

For a traditional agricultural household, summer could mean rising early and working until evening.

The garden needed tending.

Animals needed feeding.

Fields needed attention.

Hay had to be cut and gathered.

The vineyard needed care.

And food had to be prepared for the household.

There was always something to do.

The Garden Was the Family’s Pantry

One of the most important features of traditional village life was the household garden.

A family could grow much of what it would eat during the year.

Fresh vegetables were eaten during summer.

But the real importance of the garden became apparent in autumn.

What wasn’t eaten fresh could be:

pickled, fermented, dried, preserved, stored or turned into sauces and jams.

The work of summer was therefore partly preparation for winter.

Every cucumber pickled.

Every cabbage preserved.

Every jar of fruit.

Every sack of grain.

Every bottle of wine.

Was part of the family’s preparation for the colder months.

Summer and the Animals

Livestock also played an important role in household life.

Cattle, sheep, pigs and poultry could provide milk, eggs, meat, wool and other necessities.

Animals were not simply a source of food.

They were part of the household economy.

The Saxon system depended upon careful management of resources. Nothing was casually wasted.

Families had to think about the entire year:

How much grain would we need?

How much meat?

How much fat?

How much wine?

How much preserved food?

The answers depended largely on what could be produced and stored during the warmer months.

Summer Was Also a Time of Community

Not all summer work was done alone.

The traditional Saxon community depended upon cooperation.

Research into Saxon cultural landscapes documents the importance of the neighbor principle, through which communities shared responsibilities, labor and equipment. Tasks could include maintaining village streets, clearing snow and sharing agricultural machinery.

This sense of community was essential.

One family might need help with a large job.

Another family would need help later.

The village worked because people understood that everyone depended upon everyone else.

That sense of community became especially important when harvest arrived.

Autumn: The Most Important Season of the Year

If spring represented renewal and summer represented growth, autumn represented something else:

Preparation.

Autumn was when the year’s work was finally measured.

Would there be enough food?

Enough wine?

Enough preserved vegetables?

Enough fruit?

Enough firewood?

Enough meat to carry the family through winter?

The answers were found in the harvest.

The Grain Harvest

Grain was fundamental to traditional rural life.

Fields were harvested.

Grain was gathered and processed.

Some was used for household food.

Some fed animals.

Some was stored for the coming year.

Harvesting was labor-intensive and often required cooperation.

And when the harvest was safely gathered, there was reason to celebrate.

Traditional Saxon autumn customs included harvest celebrations and communal gatherings. Ethnographic research identifies autumn as an important period for harvest festivals and traditional celebrations among southern Transylvanian Saxons.

The work was hard.

But finishing the harvest brought satisfaction.

Then Came the Grapes

For Richis, autumn meant something particularly important:

The grape harvest.

Richis has a long history as a wine-growing village.

The hills surrounding the village were cultivated with vines, and wine became an important part of the local economy and culture.

When the grapes ripened, the vineyards came alive.

The harvest had to be organized.

Grapes had to be picked, transported, sorted and pressed before beginning their journey toward fermentation.

The year’s wine was beginning its journey.

And for a village with such a deep wine tradition, this was one of the most important moments of the year.

The Plum Harvest: From Fruit to Țuică

Autumn also brought another important harvest:

Plums.

Plums could be eaten fresh, preserved as jam or transformed into one of Romania’s best-known traditional spirits:

Țuică.

For generations, families in rural Romania have distilled plum brandy as part of the agricultural cycle.

The fruit of the orchard became something that could be enjoyed throughout the colder months, shared with guests and offered to neighbors.

It became part of hospitality.

At The Inn at Richis, our own homemade țuică connects today’s guest experience with that broader Romanian tradition.

Sour Cherries and Vișinată

Another traditional preparation is vișinată—a sour-cherry liqueur made by combining sour cherries with sugar and alcohol and allowing the flavors to develop over time.

Again, the philosophy is simple:

Preserve summer so that you can enjoy it during winter.

At The Inn at Richis, our homemade sour-cherry vișinată is part of that experience.

It is another small taste of the agricultural traditions that continue to shape Romanian village life.

The Great Work of Preserving Food

Perhaps one of the most important autumn activities was preserving food.

Because winter was coming.

Fresh vegetables would eventually disappear from the garden.

Fruit would no longer hang from the trees.

The fields would be empty.

The vineyard would become dormant.

So autumn kitchens became places of extraordinary activity.

Vegetables were:

pickled

fermented

salted

dried

cooked

and preserved.

This was not simply about making delicious food.

It was about survival.

Zacuscă: Summer in a Jar

One of the most beloved Romanian preserved foods is zacusca.

Eggplant, peppers, tomatoes and other vegetables are cooked slowly together with oil and seasonings to create a rich spread that can be stored and enjoyed during the colder months.

The ingredients are simple.

But the tradition represents something profound.

The abundance of summer is captured and preserved for winter.

A jar of zacuscă is a memory of summer opened in the middle of winter.

And this is one of the great themes of traditional Transylvanian life:

Nothing was wasted.

The harvest had to last.

Pickles, Cabbage and the Winter Pantry

Autumn was also the season for preparing vegetables that could survive the winter.

Cucumbers could be pickled.

Cabbage could be fermented.

Vegetables could be stored in cellars.

Fruit could become jams, preserves or dried foods.

A well-prepared cellar could mean the difference between a comfortable winter and a difficult one.

This is why the traditional cellar was so important.

It was more than storage.

It was the family’s insurance policy against winter.

December: The Pig Slaughter

Then came one of the most distinctive winter traditions in rural Transylvania and Romania:

The slaughtering of the pig.

Traditionally associated with Ignat, December 20, the slaughter and butchering of the pig was an important household event.

The pig provided an extraordinary amount of food:

Meat.

Sausages.

Lard.

Smoked products.

Blood sausage.

Pork specialties.

Different parts of the animal were preserved in different ways so they could provide food for the household through the winter.

Historical accounts of Transylvanian rural gastronomy describe pork as a major winter food source, with meat and lard preserved through salting and smoking and various sausages and traditional preparations made from different parts of the animal.

The work was substantial.

And once again, community mattered.

Neighbors and family members could help.

Food was shared.

Țuică or wine could be offered.

And the work became part of the social life of the village.

Winter: When Life Turned Inward

After the harvest was complete and the animals were prepared for winter, village life changed.

The fields were quiet.

The vineyards were dormant.

The garden was empty.

Snow could cover the roads and rooftops.

The great outdoor work of summer and autumn gave way to work inside the house.

Winter was a time for:

repairing

spinning

weaving

mending

cooking

preserving

crafting

and gathering.

Historical accounts of Transylvanian village traditions describe winter evenings as times when women gathered for spinning and sewing while stories, songs, customs and knowledge were passed to younger generations.

The pace changed.

Families spent more time indoors.

And the fire became the center of life.

Winter Was Not an Empty Season

It is easy for a modern traveler to imagine winter as a period when nothing happened.

Quite the opposite.

Winter was when many things could finally be done that had been impossible during the intense agricultural seasons.

Clothing could be repaired.

Tools could be maintained.

Wood could be prepared.

Food could be processed.

Stories could be told.

Children could learn.

Older generations could pass traditions to younger ones.

And communities could gather.

Winter therefore had its own productivity.

It simply looked different from summer.

Christmas in the Village

Christmas brought another transformation.

Homes were cleaned and prepared.

Food was brought out.

Families gathered.

Church became especially important.

The traditional winter holiday season in Transylvania included Christmas, New Year celebrations and other customs that brought communities together.

For the Saxons, religious life was deeply integrated into the rhythm of the village.

The church was not simply somewhere people went on Sunday.

It was one of the central institutions of community life.

And when winter evenings grew dark and cold, the church bells became an important sound in village life.

The Circle Begins Again

Eventually, winter gave way to spring.

The snow melted.

The ground softened.

The first flowers appeared.

The fruit trees began to blossom.

The vineyards awakened.

And the cycle began again.

Spring.
Summer.
Autumn.
Winter.
Then spring again.

For generations, the people of the Saxon villages lived according to this rhythm.

Their lives were demanding.

But they were also deeply connected to:

the land

the seasons

the harvest

the animals

the village

the church

the family

and one another.

What We Can Still See Today

If you visit Richis today, you can still recognize pieces of this old world.

The long Saxon houses.

The large gates.

The courtyards.

The gardens.

The vineyards.

The church.

The wine cellars.

The surrounding hills.

The village streets.

And, perhaps most importantly, the slower rhythm.

The landscape is different from what it was generations ago.

The technology has changed.

The economy has changed.

The people have changed.

But the relationship between place, food, tradition and community remains part of the character of Transylvania.

And This Is Why the Seasons Matter to Us

At The Inn at Richis, we believe that one of the greatest pleasures of visiting Transylvania is experiencing the region according to its seasons.

Come in spring and see the countryside awaken.

Come in summer when the days are long and the villages are alive.

Come in autumn when the vineyards and orchards are filled with harvest.

Come in winter when the countryside becomes quiet and the warmth of a fire becomes part of the experience.

Every season reveals something different.

And every season tells another part of the story.

Autumn in Richis

Perhaps nowhere is the connection between season and tradition more obvious than autumn.

Imagine walking through Richis during harvest.

The vineyards are changing color.

The grapes are being gathered.

Plums are being transformed into țuică.

Sour cherries have already become vișinată.

Vegetables are being preserved.

Zacusca is being prepared.

Cellars are being filled.

And everyone knows that winter is approaching.

It is a season of work.

But it is also a season of satisfaction.

Because the year’s work is finally becoming something you can hold in your hands.

A bottle of wine.

A jar of zacuscă.

A barrel of pickled cabbage.

A bottle of țuică.

A cellar filled with food.

A pantry prepared for winter.

And Then Come Home to The Inn at Richis

Today, you don’t have to work the vineyard all day or spend autumn filling a cellar to appreciate the meaning behind these traditions.

You can experience them differently.

Walk through the village.

Explore the vineyards.

Visit the fortified churches.

Taste Romanian food.

Enjoy Romanian wine.

Learn about the Transylvanian Saxons.

Then return to The Inn at Richis.

Perhaps sit in the historic wine cellar.

Light a candle.

Sit beside the traditional Soba.

Enjoy a glass of Romanian wine, homemade țuică or vișinată.

Listen to the fire.

Listen to the village.

And think about the generations who lived according to the same seasons.

They worked the land.

They prepared for winter.

They celebrated the harvest.

They preserved food.

They helped their neighbors.

They gathered around the fire.

And they understood something that modern life often makes us forget:

There is a season for everything.

A season to work.

A season to harvest.

A season to preserve.

A season to celebrate.

And a season
